Since then it's been easier to pick that flavour out in agave spirits. I think probably from the agave plant itself. Present in peach, pineapple, passionfruit, guava. Sweet, citrus, floral, like hops, a little orange and lemony. Orange flower water, rose, geranium, carnation. That bananary ester smell from fermentation. I hope this isn't just confirmation bias talking, 'cause they all sound pretty accurate to my tastebuds: Chemicalīanana oil. After some Google-fu and cross referencing etc., I came up with a list of notes that describe tequila pretty well. First, what tequila are you usually drinking in your Margaritas? If it's blanco, you can probably cut down on the vanillin and somewhat the guiacol but not too much, because I think the cooking of the agave adds a lot of its flavour as you'll see. Results from SDA and aroma extract dilution analysis (AEDA) were comparable, and identified 2/3-methyl-1- butanol, 2-phenylethanol, linalool, β-damascenone, guaiacol, 4-ethyl-guaiacol, eugenol, trans-isoeugenol, and vanillin as the key odorants of 100% agave añejo tequila.
